OMG I’m on a chia-seed pudding bender & I can’t stop. Thank goodness it’s super good for you or I’d be in trouble.
I think I’ve had it EVERY DAY this week so far. For breakfast. For lunch. For dessert.
Yah, I know. I’m obsessed.
Here’s the deal: it’s easy, it’s filling, it’s delicious, and just so happens to be one of the healthiest foods ever.
SOME BAD-ASS BENEFITS:
+ Chia seeds are high in omega-3 fatty acids, antioxidants, minerals & protein.
+ Chia seeds contain 11 grams of fiber and 5 grams of protein per ounce (ahem ladies: this is the remedy if you’re ever having trouble in the bathroom lol)
+ Helps to maintain stable blood sugar levels, lower cholesterol, and healthy weight.
+ Helps curb your appetite. These tiny little super seeds absorbs up to 10x their weight in water & turns into a soft gel-like pudding. So it makes you fuller, longer… and I neeeeed that. #AlwaysHungry
+ It’s refreshing and gets rid of any sugary, candy, ice cream craving. <— It really does. Oddly satisfying.
So. If you’re looking for directions, it’s easy (prep time 1 min)
Here’s what you’ll need (serving size 3):
1.5 cups Coconut Milk or Almond Milk (I like to mix a bit of both)
1 tbs Vanilla Extract
1/3 cup Chia Seeds
Here’s what you do:
- Combine your milk and vanilla extract into a jar
- Add chia seeds
- Stir. Stir like mad. A few times! This is key with chia seeds.
- Cover the jar and set in refrigerator for at least 4 hours (or over night).
- Add toppings and enjoy!
Ta-DA! That’s all folks.
For other variations:
Here, I added blueberries (which sometimes I sub for blackberries), bananas, strawberries, and granola.
Simply add it to your pudding and enjoy!
For this next variation, I made a raspberry jam: mash up some raspberries with a fork- But I’m pretty much game for anything: blueberries, blackberries, bananas, etc.
Add some greek yogurt, top it off with strawberries, granola, blueberries, and you’ve got breakfast on.the.go.
PS: I like to take this with me when I’m running super late, it’s easy & super filling!
Whenever I’m craving something really sweet, I’ll throw this lil combo together: raspberry jam, bananas, strawberries and granola. It so simple and delicious that it tastes too good to be true. Trust me.
